What to Eat

Eat Whole Foods!

What is meant by whole foods? Fresh whole foods refers to natural whole foods that have not be altered and processed by man to artificially extend their shelf life and profitability. Fresh whole foods contain the natural nutrients, enzymes, vitamins, minerals, fats, carbohydrates, proteins, etc. that are a part of living plants and animals. In their natural whole form, these foods contain everything your body needs to digest the food and bring its life giving nutrients to your body. Life begets life. The problem is that these whole foods, once their life is gone, begins a natural process of degeneration. The sooner they are eaten, the more nutrition we get from them. At varying degrees of time, these foods will spoil and no longer be edible.

When we refer to fresh whole foods, we also mean that these foods have not been genetically modified or altered by man. There is a basic issue here. If you are a person of faith, you believe that God created and provided the foods we need for a healthy and abundant life. When man thinks he can do better than what God has provided, there are always negative consequences. Others would argue that there is a natural process involved that man does not comprehend and that man’s alterations are dangerous and will ultimately lead to errors which the average person will bear the consequences of. Whatever your conclusions, both would agree that our food chain is now being driven by the drive for profits and wealth with little consideration for people’s health.

The purpose of Whole Food Nutritional Resousrces is to provide information and resources (whole grains, seeds and mixes) that will replace or supplement the diets of people in the UK.

So most of us would agree that we need  to eat natural whole foods. But mass production and large corporations have made it very difficult to find affordable food that has not been altered and processed, but we have to live in the world as we find it. Smart consumers, however, can dramatically improve the nutritional quality of what they eat if they think in terms of nutritional value rather than just monetary bulk value. It is not how much bulk food you force down your throat, it is the amount of nutrition that your body needs and can use that determines the value of the food we eat.

The best nutritional value you can add to your diet comes in the form of sprouts. Since most people are not going to take the time to grow sprouts, we have come up with a variety of nutritional raw live grains and seeds that only need soaking for preparation. Their preparation is quicker and easier than most pop-in-the-cooker ready prepared meals. We have put together a variety of mixes that can provide a nutritional burst to almost any diet.

The staple of most UK diets remains bread and carbohydrates. Bread bought at any of the major stores is risky at best. Even supposedly healthy whole grain breads have been highly processed and contain multiple enhancers and additives that are not included on the labels. If you eat a piece of whole grain bread that is light and fluffy and lasts over a week in your kitchen, then you are not eating real bread. If you want to find real bread, then check out this website: http://www.sustainweb.org/realbread/ . The most nutritious bread is made with fresh milled grains in your own home. We can provide the mills, grain, and recipes. If you want ease of use, then a bread machine can provide the ease and you can have fresh nutritious bread right out of the cooker (bread machine). For those who do not have the resources to invest in their own mill, we offer flour and bread mixes that are natural stone-milled UK whole grain without removing or adding anything.

Fresh fruit and vegetables are a must for every diet and can be easily prepared. Local and seasonable items are the most nutritious. The less cooking the better. Your local farmer’s market or farm shop is the best place to find real food.

For fresh fish and meat, local butchers, farmer’s markets, farm shops and fishmongers will usually bring you the best and freshest selections. Soak your meat in water and a pinch of sea salt to 15 minutes to remove the blood. Blood and fat are a living creatures toxic waste dumps. Both are extremely unhealthy.

How to prepare and eat soaked grains and seeds

God designed seeds to remain alive for long periods of time in a dormant state. Seeds have enzymes on their outer bran that keeps the seeds from beginning the germination process. Germination refers to the process of a dormant seed returning to live and beginning to grow a new plant. During its dormant stage, the nutrients of the seed are stored in a very complex state that cannot be used to generate new life.

When the seed is exposed to water and moderately warm  temperatures, the enzymes on the outer bran of the seed are neutralized. They no longer prevent the seed from preparing to grow. The seed must first begin to partially digest the complex nutrients. The dormant nutrients are broken down into simple parts that are necessary for the creation of new life. If conditions are right, the seed will come to life. The seed will create additional nutrients such as Vitamin C to bring everything needed for new life to burst forth.

The nutrition of this new seed generates one of the most wonderful miracles on earth. From a simple seed with no apparent life, a new plant grows. These nutrients also help the human body to grow and rejuvenate. The life giving nutrients have already been simplified so that they can easily be digested and assimilated into our bloodstream. Not only can they enter our bloodstream, they can easily pass through the walls of the living cells that make up our body. These nutrients include proteins, simple carbohydrates, vitamins, minerals, and even fats.

We know of no other way to prepare a food that ends up with more nutrition for our body than
when we started preparation. This produces the best nutritional bargain you can find.

Most people do not have the discipline or time to prepare sprouts. If you already enjoy sprouting,  include sprouted grains and other seeds in your diet, not just alfalfa and beans. For those not into sprouting, we suggest another alternative. Numerous seeds and grains can just be soaked overnight or from one morning to another. We have devised a preparation so simple and easy that anyone can do it. Start with a premixed sprouting pack or mix some of your own.

Take a couple of tablespoons of seed and nuts (whatever amount you plan to eat the next day) and place them into a recycled and cleaned jam or similar glass jar. Cover the top of the jar with plastic mesh.  Secure the mesh with a large elastic band. Pour some water (filtered if you have it) through the mesh into the jar and rinse the seeds (swirl them around and around). Turn the jar upside down over the sink (or your plants) and drain the water. Allow to soak overnight or from one morning to the next. That’s it!

The next day, pour in more water through the mesh.  Swirl the seeds around and pour out the water (great for your plants). Take the germinated seeds and you are ready to go. You can put it in yoghurt or milk and add fresh fruit for breakfast or lunch. Or place as a garnish on top of your porridge, cereal or pancakes. Or add to a fresh salad later in the day.
