Specialty Stone Milled Flours

Specialty flours are stone milled to order to ensure the most nutrition, flavour and digestibility of your flour. As with all of our products, the shipping cost is £6.95 for as many items as you want. Co-operate with friends to reduce shipping costs. The biggest difference you will notice with our fresh milled flour is the flavour. Depending on the recipe, you should also notice that the bread is lighter and less gritty. The is due to the freshness of the bran which still has the natural oils in it. The stone milling also adds to the texture since the grain is shredded rather than blown into micro particles like dust. Freezing the fresh milled flour will inhibit the loss of nutrition, flavour and oils. Once frozen, let flour thaw out at room temperature for a couple of hours before using.

 

Ordinary Flour

There is nothing 'ordinary' about this specialty flour. This new Bread Flour is fresh stone milled from a grain called ‘Magister’ which has good milling properties and is light, versatile and ‘strong.’ In addition to the stone milled wheat, it includes stone milled rye, linseed and maize. We know home bakers will enjoy the performance and flavour of this one which is a best seller at Farmer's Markets! Comes in 1.14kg bags. This fine milled Bread Flour comes with a recipe for hand baking and for bread machines (tested in a Panasonic). The flour is suitable for freezing. Ensure you thaw out at room temperature.

 

Seeded Bread Flour

This new Bread Flour is fresh stone milled from a grain called ‘Magister’ which has good milling properties and is light, versatile and ‘strong.’ In addition to the stone milled wheat, it includes stone milled rye and maize with millet, sunflower, linseed and sesame seeds. We know home bakers will enjoy the performance and flavour of this one which is a best seller at Farmer's Markets! Comes in 1.12kg bags. This fine milled Bread Flour comes with a recipe for hand baking and for bread machines (tested in a Panasonic).  The flour is suitable for freezing. Ensure you thaw out at room temperature.


Sussex Bread Flour

This new Bread Flour is fresh stone milled from a grain called ‘Magister’ which has good milling properties and is light, versatile and ‘strong’ enough to make a superb single variety 100% Wholemeal Loaf. The 2010 harvest has produced good values and the crop was grown in West Sussex - only a few miles from our southern base.  We know home bakers will enjoy the performance and flavour of this one!  This fine milled Bread Flour comes with a recipe for hand baking and for bread machines (tested in a Panasonic).  The flour is suitable for freezing. Ensure you thaw out at room temperature.

 

Whole Barley Flour

100% whole grain, not pearled, stone milled barley. This special barley is the only imported grain we sell.  Imported from Germany from farms that do not use pesticides and herbicides. This barley is just not available here until our supporting farms can grow it. Whole barley, not like what you buy at the store, has all the wonderful bran intact. This special water soluble bran has 3 times as much bran as oats. One of the healthiest grains, but only when it is whole! We sell it in 500g bags.
