Yorkshire Dales
Nutty
Granola
Some people just don’t like nuts. This granola recipe is wheat free and nut free. It makes a great granola base that you can add other ingredients to or add to other foods as a topping or additional ingredient.
Those who do not want sugar love this one. We have an insulin dependent diabetic friend who asked us to develop a granola for her and this is the result (we make no promises or health claims since every diabetic responds differently to different foods). This product is a treat for those who are sugar conscious for several reasons. Refined and dated flours are difficult at best for those with blood sugar problems. Our granolas use fresh milled whole grains. This recipe includes 7.3% of unrefined honey direct from the beekeepers. The raw honey, oats, virgin olive oil and fresh-milled spelt are all friendly to the sugar conscious consumer. The nutty taste comes from the fresh oats and spelt.
Note: Each person who has blood sugar problems reacts differently to different foods and there are often differences in tolerance based upon the amount of the food consumed. We can not make any claims for this product’s suitability for people with sugar related concerns other than the offer to try small amounts and see how you respond. People who have severe reactions to sugar should check with their nutritionist or medical professional before consuming this product.
Bread of Life & Yockenthwaite Farm, both in Upper Wharfedale in the Yorkshire Dales, have joined together to bring you this special fresh-milled cereal. Originally developed by Bread of Life to demonstrate fresh-milled grains, Elizabeth Hird began to offer it to her B&B guests at Yockenthwaite Farm. Guests responded favorably to this ‘gorgeous’ cereal & repeatedly asked to purchase it. Originally it was considered too expensive and time consuming to produce, but the demand could not be quenched. We took about 20 small samples to sell and test market at the Country Living Christmas Fair in 2005. They sold out quickly and we got several e-mail responses like ‘I want to order 5kg’ and ‘Anyone who tastes this will buy it!’. One lady at the fair said that she always bought the best granola she could find whenever she visited the US, but she had never tasted anything quite like this.
We produce 450g buckets for our internet orders and ship it freshly made. Orders over the internet currently take about a week to 10 days to deliver.
Our Original Nutty Granola begins with fresh milled grains. We add peanuts, almonds and walnuts in a mixture with local honey direct from Yorkshire beekeepers and virgin olive oil. Good fresh carbs, good fats and unrefined sugars produce something that is quite special.
When we were test marketing the granola at the fairs, many people were peanut and wheat intolerant and asked us to make a granola for people with these allergies. Our wheat-free and peanut-free granola is made with spelt grain, but keeps the goodness of the almonds and walnuts. Spelt is an ancient and nutritious grain that the Romans used and is mentioned in the Bible. Most people who are wheat intolerant, except Coeliacs, have discovered that they can eat spelt. We mill our spelt fresh on the farm.
